TEMPERING USE INSTRUCTIONS
Tempering is an essential process that allows your Block Ice to gradually warm up and reach the appropriate temperature before you put it to use. Ice that hasn’t been tempered properly may experience cracking when liquid touches its surface, resulting in a flawed and unsightly appearance that diminishes the quality of your presentation. Furthermore, tempering can effectively restore clarity to ice that has become frosty or freezer burnt, which can lead to a cloudy look that is unappealing for your event.
You can temper your ice by allowing it to come to temperature either in a refrigerator, an ice well, or simply in open air until it becomes clear and visibly wet. The time required for tempering will vary depending on the size and volume of the ice you are working with, as well as how cold the freezer was during storage. However, you should generally plan for the tempering process to take approximately 5 minutes for a single cube of ice. After just a few minutes, your ice will temper beautifully to achieve crystal clear clarity.
It is important to remember, though, that you should NOT run your ice underwater to temper it, as this can lead to cracking and ruin the quality. To ensure the best experience, use your tempered ice within an hour or so, serving it to customers or guests when it is clear and visually appealing. Additionally, tempered ice can be securely stored in an ice well, ice bucket, or refrigerator until it is ready to be used.
